The crumb of the bread is the texture of the inside of the bread once you slice into it. Some adjectives that describe crumb can be, holey, dry, moist, dense, airy, fluffy, compact, chewy, open textured, soft, etc

Actually, thanks. This is a nice nutshell description with that useful list of adjectives...after Jane reads the desem post and comes up with an answer, I'll make sure she sees this too.
