These aren't exactly the thing for Lent, and I'm thinking a whipped-cream filling would be more to my taste than seven-minute frosting, but the overall concept sounds heavenly: Whoopie pies.

Mmm, I grew up eating a lot of those! My mom used a filling recipe that involved Marshmallow Fluff (a New England food--it's thicker than the marshmallow "creme" that is used on ice cream sundaes). I also make pumpkin ones that have an orange/cream cheese filling. And oh--gingerbread ones are good too... ;)

Yes, these are a big "Maine" treat. My husband's grandmother made the best whoopie pies! She passed away in 2005. I am a very good cook, but I have never been able to replicate her pies, even with her recipe! They are very good!

These are one of the very yummy things about living in PA Dutch Country...I can't get excited about many of the other bland, oddly yellow things (Chicken Corn soup: good but blah...chicken and waffles: good once you get over your initial "ick! waffles with chicken?!" thing...REAL chicken pot pie, which is not really pie at all but rather glorified chicken and homemade noodle casserole-y stuff...and all colored with saffron, which seems to be mistaken for a seasoning rather than a coloring agent...) but yummyyummyyummy, whoopie pies! Big fan...growing bigger with each one I eat, unfortunately...
